Artisanal and diversified aquaculture
Thanks to the optimal conditions we find ourselves in for pursuing claire salt pond aquaculture, we are able to produce, raise, and finish oysters, clams, tiger prawns, sea bream, and samphire in Saint-Clément-des-Baleines on the Île de Ré.
The density and quality of nutrients in the water from Fier d’Ars Bay and the composition of the clay sediments in our 23 hectares (56.8 acres) of claire salt ponds give La Ferme des Baleines products the characteristic taste of the merroir of Saint-Clément-des-Baleines.
We practice salt marsh aquaculture.
Oyster cultivation and finishing in claire salt marshes
Because we specialise in cultivating and finishing oysters in salt ponds, we decided to produce only the best, artisanally and at lower densities to ensure the full development of our oysters and clams.
